Come and spend a few hours with Paula Maddison, a deep in the bones slow-foodie with a passion for teaching people how to craft their own cheeses.  Using readily available products and introducing you to the science and process of cheese making Paula will teach you how to craft your own Havarti cheese.  This is a demonstration-style taste, touch and feel class that focuses on the history, chemistry and science and the process of cheesemaking, Paula will also show you different ways to create unique types of Havarti along with differing methods for aging the cheeses you will create in your own home.  You will be bringing home detailed instructions and ingredients to make cheese at home.  Paula also brings along other cheese making kits, supplies and forms for you to purchase.  Learning how to craft how own cheese with Paula is a fun and delicious way to start the New Year!

All students receive a discount for in-store shopping during and after the class!  Please arrive 15 minutes early to check-in and get seated.

This is approximately a 2-2.5 hour class. Class may run longer than posted time depending on questions and student engagement.

Refund Policy

Up to 14 days before the class date:
We will issue a Class Gift Voucher of the full value of the class for future registration in another class.
Within 14 days of the class date:
No refunds or credits will be issued for cancellations less than 14 days before the class date. You are welcome to send someone in your place.

If it is necessary for us to cancel a class, we will issue a full refundor offer an exchange for another class. By purchasing a class online, in the store or via the phone, you automatically agree to the aforementioned terms and conditions.

Age Restrictions

Classes are open to all ages. Children must be 12 years or older to attend class without a parent or guardian. Anyone under the age of 12 must be accompanied by a parent or guardian, both the child and parent/guardian must have a purchased seat.

If indicated, you class will include a wine pairing that will be served only to adults over the age of 19, please be prepared to show ID. There is no discount for minors or those who choose not to have wine, but alternative non-alcoholic beverages will be provided!

Allergen Information

We cannot guarantee the absence of any allergens in our kitchen, or on our work spaces and tools.

If you have a severe allergy, please use your judgement if you feel safe to attend. You are welcome to participate, take notes, learn some new skills and take your food home for others to enjoy! Eating food is done at your own discretion.

FAQ

  • Do I need to bring anything? Most of the time, no! Skills classes may require you to bring your favourite tool and will be noted in the class info. Otherwise, you are not required to bring anything. We will provide all cooking tools, food, recipe and a pen for notes.
  • Can I record the class? No. There is no recording permitted during the class, however reference photos can be taken.
  • Can I take extra food home? Yes! Bring your own container from home if you think you will have leftovers. We will not provide take-home containers.

About the Instructor

Paula is a transplanted Wisconsin "cheese head" who loves to teach people how to make their own hand crafted cheeses.

Using readily available products and comprehensive instruction, you can also master making cheese in your own home. A deep in the bones “slow foodie”, multitalented lass who has a passion for hand crafting and cheese. You will be taken into the world of sumptuous flavour, ancient craft, history, science, chemistry and food as medicine. Come spend a few hours with Paula and spark your own love of crafting cheese!
