Zaatar with Nazmi
Zaatar with Nazmi
Saturday, April 11th at 5pm
- Part 1: Za'tar Making Workshop (Hands-On): Participants will make their own za'tar mix to take home.
- Part 2: Baking with Za'tar
- Part 2, Item 1: Mana-eesh (Flatbreads with Za'tar and Akkawi Cheese): Za‘atar manaeesh is a deeply everyday Palestinian and Levantine food. It’s made from soft, hand-stretched dough topped with za‘atar (wild thyme, sesame seeds, sumac, and salt) mixed with olive oil, then baked until lightly crisp. Traditionally eaten in the morning, it’s breakfast and school-day food, bought fresh from neighborhood bakeries or wrapped at home to take on the go. The za‘atar blend and olive oil often come from family or local sources, so flavors vary from village to village.
- Part 2, Item 2: Fresh Za'tar Loaf (Khobzeh O Jubneh) Aka Palestinian Cheesy Bread: Khobzeh o Jubneh is a loaf-style bread filled with fresh za‘atar leaves and mild Akkawi or Nabulsi cheese, finished with a touch of flaky sea salt. Traditionally enjoyed in the morning, it also works as a midday snack or a light dinner. Optional additions include chopped green olives or sun-dried tomatoes.
