Musakhan is a traditional Palestinian dish made by layering flatbread with slow-cooked onions, sumac, and generous amounts of olive oil, then topping it with roasted chicken and toasted nuts. Deeply aromatic and tangy, it balances the sweetness of caramelized onions with the citrusy bite of sumac and the richness of olive oil.

- Tabbouleh of Fattoush Salad
- Chicken Musakhan Flatbread
- Dessert

Musakhan is closely tied to the olive harvest season and reflects Palestinian rural food traditions. It is eaten by hand, meant to be torn, shared, and enjoyed together, embodying hospitality, seasonality, and a strong connection to land and culture.

All students receive a discount for in-store shopping during and after the class! Please arrive 15 minutes early to check-in and get seated.

This is class is approximately 2-2.5 hours. Class may run longer or shorter than posted time depending on student engagement.

Refund Policy

Up to 14 days before the class date:
We will issue a Class Gift Voucher of the full value of the class for future registration in another class.
Within 14 days of the class date:
No refunds or credits will be issued for cancellations less than 14 days before the class date. You are welcome to send someone in your place.

If it is necessary for us to cancel a class, we will issue a full refundor offer an exchange for another class. By purchasing a class online, in the store or via the phone, you automatically agree to the aforementioned terms and conditions.

Age Restrictions

Classes are open to all ages. Children must be 12 years or older to attend class without a parent or guardian. Anyone under the age of 12 must be accompanied by a parent or guardian, both the child and parent/guardian must have a purchased seat.

Allergen Information

We cannot guarantee the absence of any allergens in our kitchen, on our work spaces or tools.

If you have a severe allergy, please use your judgement if you feel safe to attend. You are welcome to participate, take notes, learn some new skills and take your food home for others to enjoy! Eating food is done at your own discretion.

FAQ

  • What if I can't make it? We do not offer refunds, exchanges or credits, but you can transfer your seat to a friend!
  • Can I take extra food home? Yes! Bring your own container from home if you think you will have leftovers. We will not provide take-home containers.
  • Do I need to bring anything? Most of the time, no! Skills classes may require you to bring your favourite tool and will be noted in the class info. Otherwise, you are not required to bring anything. We will provide all cooking tools, food, recipe and a pen for notes.
  • Can I record the class? No. There is no recording permitted during the class, however reference photos can be taken!

Other Terms & Conditions

Photographs and video may be taken in class to be used for promotional content on our social media platforms, newsletters, website, advertisements or other distributions for Vinca's Kitchen, please inform us if you prefer not to be in any photographs or videos.

About the Instructor

Nazmi Kamal (Naz) is a Post secondary educator and home cook. He is an advocate for food sustainability, immigrant cuisine and food as a cultural identity. He is a food researcher, a home cook, a farm volunteer, and a responsible consumer. His approach to Palestinian cuisine goes beyond recipes to include generational knowledge as he utilizes multi-sensory experiences and visual aid to transport his audiences through history, time and place.
